These Mini Blueberry Iced Chai Galettes are perfect for a quick dessert. Gooey little galettes filled with a tart, scrumptious blueberry filling. They’re perfectly crisp, flaky, and delicious. These impressive little bites are so easy to make and will be a crowd pleaser for sure.
Ingredients
carrot cake
300gr of blueberries
25gr or 2 scoops of Blueberry Iced Chai
1 tbsp of cornstarch
Zest of 1 Lemon
Juice of 1 lemon
Flaky pie crust
1 Egg (beaten)
Sour cream or ice cream as a topper
Instructions
This recipe serves up 8 little galettes.
Preheat the oven to 190°C. Line a baking sheet with parchment paper
Combine all the ingredients for the filling. In a bowl add the blueberries, Blueberry iced chai, cornstarch, zest & juice of one lemon.
Fill the mini galettes by cutting out little rounds of the pie crust and filling them with 1-2 spoons of the blueberry mixture.
Then fold the dough up over the filling. This takes a bit of practise and remember always to keep a bigger edge than you think because they spread in the oven.
Place the galettes on your baking sheet and brush them with the beaten egg. Sprinkle raw cane sugar on top.
Put them in the oven for 30-35 minutes until golden brown.
Garnish with fresh mint leaves. Serve warm with vanilla ice cream or whipped cream.
